Why people split
Diners say they want this and the restaurants that tried it mostly could not keep it, which is the whole argument in one fact. Union Square Hospitality Group, Danny Meyer's company and the flagship of the American experiment, launched Hospitality Included in 2015: prices went up, tipping went away, and the extra revenue was meant to reach cooks and dishwashers who legally could not be given a share of tips. In July 2020, as restaurants prepared to reopen for outdoor dining, the group abandoned it. Meyer's conclusion was narrow and specific: it is the inability to share tips that is the problem, not the tips themselves. The cost had landed on the people the policy was least meant to hurt: roughly 40% of experienced front-of-house staff left for tipped jobs elsewhere after the change, because a good server on a busy night earns more from tips than from any wage the house is willing to post. So the split is not simply generous customers against stingy ones. It is between people pricing the meal and people pricing the job, and they get different answers.
